Beans curry with grated coconut/ Beans Thoran

Ingredients:
Beans, Thinly Sliced – 2 cups
Grated Coconut – 1 cup
Green Chilly – 3 Nos
Garlic pods - 4 Nos
Shallots – 4 Nos
Salt - As per your taste
Mustard Seeds – 1 tsp
Curry leaves – 1 sprig
Coconut Oil – 1 tbsp

Method:
Microwave the thinly cut beans for 5 minutes with some salt.
Grind the grated coconut, Green chilly, garlic pods and shallots. Make sure they are not grinded to a fine paste, they need to be coarse.
In a pan heat 1 tbsp coconut oil. Once its hot sputter the mustard seeds. Add the curry leaves and add the beans. Sought them for a minute and add the coconut mixture to the beans. Mix well. Cook them for 5 minutes till the beans get coated with the coconut mixture.
Add salt if required.
Beans Thoran is ready to be served with rice.
