Gajjar ka Halwa, is one of the most common sweet found in north India. It features in almost all the events out there.

As you move down south, the colour of Gajjar ka Halwa changes from red to orange. This is primarily due to the carrots used in each area. In North, we use the Delhi Carrots which is dark red and not very sweet. While in southern parts, we use Ooty carrots, which gives the pleasant orange hue and add to its sweetness.

Gajjar ka Halwa can be had both as hot as well as a cold sweet. I personally like it cold while my hubby likes it hot. He dabs an hearty helping of vanilla ice cream with it. He says, they are made for each other.

This dish is dedicated to my hubby's best friend, Abith. He just loves this sweet. Well, he loves almost all the sweets.

This recipe requires a lot of patience. It takes nearly 2 hours to make this. And its truely worth the effort. Every ounce of it. Even more when you see your near and dear ones enjoying the dish. And of course the compliments that comes in. Lets just call it a spoon full of happiness.

Ingredients:
Carrots - 500 grms
Milk - 3 half ltr packets
Cardamom Powder - 1.5  tsp
Sugar - 150 grms( can vary according to the sweetness you require)
Cashew nuts - 1 tbsp
Almonds - 1 tbsp
Raisins - 1/2 tbsp
Ghee/Clarified butter - 3 tbsp

Method:
1. Grate the carrots.
2. Toss the grated carrot in ghee for 5 minutes.
3. Fry the dry fruits in ghee and keep them aside.
4. In a heavy bottomed pan boil milk till it becomes less than 1/4th of its quantity.
5. Add the grated carrot, sugar and cardamom into the milk.
6.Stir continuously till it becomes thick.
7. Garnish with the dry fruits.
