I got myself a tray of egg. And thus, its been mostly eggs for dinner lately. I wonder why these supermarkets put best offer on the biggest tray of eggs.
The first half of week saw a lot of the regular egg recipes. Predominantly, the sunny side up. I told my wife that i don't want to see sun for some time. "You don't like it sunny, make it cloudy" she said.
A fluffed up egg white does look like a cloud. And she would sure be surprised if i managed to make the egg cloudy as she joked. But i have never put a fluffed up egg white in a frying pan. Why not experiment with that. After all, if we did not experiment on food, we would still be eating raw food.
Anyway, coming back to the topic, below is the recipe i used for the not so sunny days. The "Egg on Cloud". It was voted as the best dish of the day in my kitchen. My wife was not around when the vote was taken :). Do try it and let me know how the votes went at your place.

Break the egg shell and place the egg white and yellow in separate container. Beat the egg white till it forms up. I used a egg beater to fluff it up.
In a non stick pan, heat the oil. Add chopped shallots into the pan. Fry until the shallots turn slighly brown. Add the salt, turmeric powder and chicken masala and fry in slow flame for a minute. Now add the Egg white evenly over the pan, cover the pan and cook in slow flame for a minute. Now add the egg yellow to the center without breaking the yolk. Cover cook for a few minutes.
If you prefer to fry both sides, then turn it upside down. Else cover cook until the egg is ready.
Serve hot.

Loved the recipe.. especially the India touch with chicken masala.. tried this at home and my co- sister loved it...
