Tomato Coconut Chutney / Tomato Coconut chammandi |
So here i am sharing with you my mom's special tomato coconut chutney.
Ingredients:
- Grated Coconut - 1 cup
- Tomatoes - 2 nos
- Green Chilly - 2 nos
- Ginger - 1 inch piece
- Onion - 1
- Curry Leaves - 6
- Mustard seeds - 1 tsp
- Fenugreek powder - a pinch
- Aamchur Powder/Dry mango Powder - 1 1/2 tsp
- Coconut Oil
- Salt as required
Method:
1. Microwave the tomato for 3 minutes.
2. In a grinder mixer put grated coconut, ginger, green chilly, half onion and microwaved tomatoes.Grind them to form a smooth paste.
3. In a pan heat some coconut oil, splutter mustard seeds and add fenugreek powder.
4. Add chopped onion and curry leaves, once the onion turns translucent add the coconut and tomato paste ( 2. point).
5. Add salt , dry mango powder and little water.
6. After about three minutes turn off the stove.
Tomato coconut chutney is ready to be served.
