Soft Idli recipe
A good breakfast is the most important meal of the day. I have been pushing my husband to eat healthy food and that is not a easy task. Why is that all the food that my husband loves are always full of oil, cholesterol and all the bad stuff? And to make something that he would love and will also be healthy is a mammoth task.

Today, i am placing all my bets on idly. And in order to make it delicious, i need to make sure its soft, fluffy and delicious. And it has to go with a great curry. No, i dont want to give him non veg with it. but a great tasting veg breakfast.

Idly is very common in south India.  And goes very well with coconut chutney, tomato chutney, sambar or any non veg curry. But today, i am going to experiment with a mix of tomato and coconut chutney which i will be posting later.

This is my recipe for a soft fluffy recipe.

Ingredients:
Idly Batter : 1 mug full. Please refer Dosa recipe to make the batter.

Idly cooker : See image

Pour a little water into the idly cooker and keep it to boil. In the Idly plate, spread a thin layer of oil, pour batter into the idly plate as shown in picture

Place the idly plate in idly cooker and steam for 10 - 15 minutes. Check if the idly has been cooked by poking a hole in it with a fork. if the fork comes out clean without the dough, then idly is cooked.

Turn off the cooker and let it cool. Its easier to take the idly out as it cools down. Once it cools down, take the idly out using a spoon
Serve hot.

I served it with my special tomato coconut chutney and my husband loved it. he said that it filled his stomach and heart. What more do i want to hear.
