Lemon rice
I love cooking. But sometimes I get lazy. My husband would contradicts that statement as I find him in the kitchen more than me. After a long hectic day I really did not want to make dough and then rotis. Too much effort. I want to make something simple, quick and tangy. The first thing that came to my mind is the lemon rice. Yet another south Indian special.

Out here in Karnataka, it is also known as chitrana. I always had this every time we had long journey in train. Every trip from Gujarat to Kerala, my mom used to pack bowls of lemon rice and Poori. They last long even when its kept out of fridge. And in Gujarat, if its outside the fridge, its as good as being in the pan itself.
 The childhood memories add to the flavor of this dish :)

You can have this dish with any type of chutney. Personally I like it with tomato sauce.

Ingredients:
Rice - 1 cup( daily use rice)
Water - 2 cups
Green Chillies - 4 nos (can vary according to your spice levels)
Onion - 1
Curry leaves - 10
Corriander Leaves - 1 tbsp
lemon - 1 to 2 ( you can vary according to your taste preference)
Turmeric Powder - 1/2 tsp
Mustard seeds - 1 tsp
Chana dal - 1 tsp
Urad dal - 1 1/2 tsp
Hing - a pinch
Peanuts - 1/2 cup
Oil
Salt to taste

Method:
1. Cook the rice in the pressure cooker for 2 whistles with turmeric powder added into it.
2.In a vessel roast the peanuts with 1/2 tsp of oil. keep it separately in a bowl.
3. In the same vessel add oil and let add the mustard seeds once the oil gets heated up.
4.After the mustard seeds splutter add the chana dal after about 30 seconds add the urad dal and hing.      Sought them for about a minute in low flame.
5. Add the onions, green chillies and curry leaves.
6. Once the onion become translucent add the cooked rice and mix them well.
7. Pour the lemon juice and add salt according to your requirement.
8. In the end add the roasted peanuts mix them well.
9. Garnish the lemon rice with Coriander leaves.

Lemon rice is ready to served.
