Ingredients
Prawns : 2 cups
Mustard seeds : 1/2 tsp
Crushed Ginger : 1 tsp
Crushed Garlic : 1 tsp
Shallots / small onion : 1/2 cup
Fenugreek seed powder : 1 pinch
Curry leaves : 1 sprig
Vinegar : 1 tsp
For marination :
Kashmiri chilli powder : 1 tsp
Red chilli podwer : 1 tsp or according to spice level
Corriander powder : 1 tsp
Turmeric powder : 1/2 tsp
Black pepper powder : 1/2 tsp
Garam masala : 3/4 tsp
Salt to taste.
Method
Clean the prawns and marinate it with the ingredients in "For Marination" mentioned above. Keep it aside for 20 minutes at room temperature.
In a heavy bottom pan, splutter mustard seeds. Add the fenugreek powder. Ensure that the powder does not get burnt. Add ginger and garlic and saute for a minute. Add the curry leaves and shallots. Roast them till they turn golden brown. Add the marinated prawns and vinegar and cook with the lid. Cook for 3 minutes and then stir the prawns. And cook for another 2 minutes.
Ensure that the prawns is not over cooked as they will become rubbery when overcooked.
