Sunday is right there in the corner. And I am planning to make my husbands favorite. Appam. Now the bigger question is what do i make to go along with it?? First things first. Ill check my fridge to see what all resource i have.
When i opened my fridge, the first thing i saw was eggs. An quick and easy ingredient that always give a good dish. So today will be making kerela style egg curry. with enough gravy to go along with the appams. Egg curry can be served with Appam, Chapati, Dosa, rice etc., you can use your own creativity for the various combinations. I love egg curry with Appam.
People who love egg can try this spicy delicious kerala style egg curry.
Ingredients:
- Eggs - 2 nos
- Onion - 1 large
- Tomato - 2 nos
- Green Chilly - 1 no
- Garlic - 1 tsp
- Ginger - 1 tsp
- Corrinader leaves - 1 tbsp
- Curry Leaves - 2 sprigs
- Red Chilly Powder - 3/4 tsp
- Kashmiri Chilly Powder - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Corriander Powder - 3/4 tsp
- Garam Masala( Chicken/meat - preferably home made) - 1/2 tsp
- Mustard seeds - 1 tsp
- Coconut milk - 1 tbsp
- Coconut oil
- Salt to taste
Method:
1. Boil the eggs.
2. In a deep bottom pan, pour some coconut oil and splutter the mustard seeds.
3. Add in the Finely chopped ginger and garlic. saute them for about 30 seconds.
4. Add thinly sliced onions, green chilly and curry leaves.
5. Once the onions become translucent add red chilly powder, kashmiri chilly powder, turmeric powder, corriander powder and garam masala. sought for about a minute.
6. Add the chopped tomatoes.cover the pan with a lid for 2 minutes.
7. Add some water to the masala and bring it to boil,
8. Add Salt and check the salt level.
9.Make a slit on the eggs from two sides( this is done so that the gravy could get into the egg).
10.When you see that the gravy is thick, add the coconut milk.
11.Immediately after pouring the coconut milk add the eggs and let them cook for abut a minute on low flame.
Garnish the curry with corrinader leaves.
Kerela style egg curry is ready to be served with Appam/Chapati.
