Delicious Masala Dosa


What should i cook for today's dinner??? This was the question which was swirling around my mind, not that this is the first time I am asking this question to myself. After pondering a lot and doing  quick check of what i have at home, i came to a decision, Masala Dosa it is!!  After all I have the left over dosa batter in the kitchen :)
Delicious home made Masala dosaMasala Dosa, as the name suggests is stuffed vegetable masala inside a dosa. The masala is basically prepared of smashed potatoes. It is a famous dish in South India and is eaten with coconut chutney and sambar. However, my husband prefers it with special tomato chutney.

Here is my Masala Dosa Recipe:

Ingredients: 
Dosa Batter : 1 mug full. Please refer Dosa recipe to make the batter.

For Masala:

  1. Potato - 3 nos
  2. Onion - 1 no
  3. Green chilly - 3 nos
  4. Ginger - 1 inch
  5. Curry Leaves - 2 sprig
  6. Corriander leaves - a handful
  7. Turmeric powder - 1/2 tsp
  8. Hing - a pinch
  9. Mustard seeds - 1 tsp
  10. Lemon Juice- 1 tsp (can vary according to your taste level)
  11. Salt - as required


Method:
For the Masala:
1. Boil he potatoes in a cooker for 3 whistles.
2. smash the potatoes nicely.
3.Chop the onions,green chillies and ginger piece.
4. In a pan, once the oil gets heated, add in the mustard seeds, once they start to splutter add in a pinch of hing followed by ginger. After 30 seconds or so add the onions, green chillies and curry leaves. once the onions are cooked, add turmeric powder.
5. After few seconds add the smashed potatoes and mix them well. Add the salt and lemon Juice. mix them.

6. After about two minutes add the chopped corriander leaf and turn of the stove.

For the Masala Dosa:
spread ghee on the surface of the griddle once it gets heated.
Take a curved spoon, fill it with the batter and pour the same on the girdle.
spread the batter in such a manner that it forms concentric circle.

Cover the gridle with a lid, after about a minute take the lid out, and when see the surface of the dosa becoming brown in color, put a tbsp of the masala and cover the masala with the edge of the dosa.

Masala Dosa is ready to be served. Have it hot so that you can enjoy the crispy sides of the Dosa.
