Method:
To make dough, we can simply add wheat flour, water and salt and knead. However, to make a really nice phulka, we need a nice soft dough.
Heat water in a pan. In another vessel, add the wheat flour and salt. Now slowly add hot water and mix it well (Use a spoon as it will be hot). Add the milk and knead the dough with hands. When the dough turns smooth and soft, make it to one big ball, cover it with a slightly wet cotton cloth and keep it aside.
After 10 minutes, make small balls out of the dough. Roll the ball flat into thin sheet. Sprinkle flour on the dough so that it will not stick to the roller.
Heat a tawa on medium flame. Place the flattened dough on the tawa. When this side gets dry, turn it upside down. When the phulka starts to get slightly brown, pick the phulka using a tongs and place it directly on high flame. This will puff up into a ball. Turn it upside down and then remove it from flame. Your phulka is ready.
Note : It will take a little practice to make a proper fluffed up phulka. So keep doing it till its perfect :).
Tip : Excess Dough? Keep it in a airtight container in the fridge. It will last longer this way.
