Method
Soak the rice in water for an hour. Drain the water off and ensure that there is no excess water.
In a heavy bottom pan, heat 2 tbsp of ghee. Add bay leaf, cloves, cinnamon, cardamom and jeera and fry them for a minute. Make sure that the jira does not get burnt. Add the rice and mix well. heat for 5 minutes while stirring continuously. Pour 2 cups of water and close the pan with a lid. Cook in slow flame.
After 15 minutes, open the lid and mix the rice. Check if the rice is cooked. if the rice is cooked and there is excess water, then cook without the lid till water evaporates. If the rice is not cooked, then cook until it is cooked. Add water if necessary.
Jeera rice goes well with dal fry
