Grape wine

A Christmas is not complete without home made wine. Unlike any wine that you get in the shops, this one is a sweet, young (just 1-2 months old) and plain wonderful.
Wine was my grandpa's forte. He had 2 huge jars to make wine. Jars so huge that i used to hide behind them when playing hide and seek. In case you are wondering, I used to play hide and seek about 20 years and 50 kgs back. Anyway, coming back, he used to make wines of all sorts. Grape wine, Ginger wine, Amla wine and what not. When the wine was in the jar, we were not allowed near it. It was like an mystery room, where grapes goes under a spell and turn themselves into wines.
Skipping many years and coming to present, A jar that large is nowhere to be found these days. So i have chopped down the recipe to make wine in very small quantities. Using a recipe that was taken out of the mystery room, to brew a spell  of magical wine. So that, this Christmas, may truly be magical.
Home made red wine
Ingredients
Black grapes : 2 kg
Sugar : 1 kg
Water : 2 litre
Yeast : ¼ tsp
Wheat : 1 tb sp
Cloves : 1
Grated beet root : 1 tb sp
Sugar : 1 cup
Egg white : 1          

Method
Soak grapes in water for 5 minutes, wash  thoroughly and drain. Crush the grapes well and keep aside.

Boil 2 ltr water and cool.

Take a clean jar and put the crushed grapes and sugar in it. Dissolve yeast and 1 tb sp sugar  in half cup warm water and add to the grapes. Add  grated beet root. Add beaten egg white and stir well. Take wheat in a piece of cloth and tie it loosely with thread and put it in the jar. Add water, stir well,  and cover the mouth of the jar with a cloth and tie tightly.
Stir the contents with a ladle every other night. Filter through a fine cloth on the 22nd day. Take one cup of sugar  in a pan and caramalise the sugar with half a cup of water. Add it to the filtered wine and stir well and keep it undisturbed for one week. Fill in bottles using a tube. Do not fill the bottles  up to the brim, leave some space and put the cap, tighten the cap after a few days.

There will be 4 bottles of clear wine. Cocktail essence and colour can be added if desired.

  3. Wow you have demystified the process nicely...I always thought making wine was like rocket science :-) I blog about recipes too but mine are baby and kiddie food recipes...wine can help moms to handle stress better though :) Thanks for sharing...
