Dates Pudding
Ingredients

  • Butter : 125 gms
  • Castor sugar : ½ cup
  • Dates (finely chopped ) : 225 gms
  • Marie biscuits : 250 gms
  • Egg : 1 no


For the cream

  • Sugar : 12 tb sp
  • Boiling water : 12 tb sp
  • Egg yolk : 4 nos
  • Egg whites : 4 nos
  • Castor sugar : 6 tb sp
  • Warm milk : 2 cups
  • Gelatine : 6 tsp
  • Vanilla essence : ½ tsp
  • Cream : 1 cup
  • Badam/cashew nuts for garnishing

Method

        Melt butter in a pan,add sugar and dates, stir well, add egg, stir well and remove from stove. Add cruhed biscuits, mix well. If it is very dry add  little milk. Put this in a pudding dish and keep aside.

To make creamy layer
       Make caramel with with sugar and water

      Beat egg yolk and sugar and add  caramal and mix wellAdd milk and double boil the cream till it thicken. Remove from fire, add melted gelatine, mix well,add essence and keep in refrigerator to set. When set, take  out of the fridge and beat with  electric beater, add cream and fold in  stiff egg whites . Pour it over the date mix and keep it in fridge to set.

       Garnish with nuts and badam. Just before serving,pour date sauce over the pudding.

 Date sauce
       Cook ½  cup chopped dates with half cup butter and  ¼ cup  sugar ½ cup water in low flame till the sugar dissolves. Remove from stove and beat well with a spoon.
