Orange cheese cake

Ingredients
For cheese cake mix

  • Arrowroot buscuit (Crushed) : 250 gms
  • Unsalted Butter : 125 gms
  • Gelatin : 3 tsp
  • Water: 1/4 cup
  • Cream Cheese : 500 gms
  • Powdered sugar : 150 gms
  • Orange juice : 2 tbsp
  • Orange zest : 1 tbsp
  • Fresh Cream : 2 cups
  • Egg white : 2 
For Orange curd
  • Sugar : 1/2 cup
  • Corn flour : 2 tbsp
  • Water 1 cup
  • Butter : 1 tbsp
  • Orange juice : 1 tbsp

Method
Melt butter and mix with crushed arrowroot biscuits. Press this mixture into the bottom of the cake tin and cool it in fridge.

For cheese cake mix
Melt gelatin in warm water. Keep this aside.
Beat cream cheese and sugar using a egg beater. Add orange juice and orange zest and beat till it has blend in.
Beat cream in another bowl till it lathers up. Similarly, beat egg white in another bowl.
Mix gelatin and cream cheese slowly. Now add the egg white while mixing it.

For orange curd
Mix sugar, corn flour and a cup of water and heat in medium heat. Keep stirring continuously  When this thickens, add orange zest, butter and orange juice and keep it aside to cool.  

Take the cake tin from fridge. Add half of the cheese cake mix evenly over the biscuit  Now spread half  of the lemon curd on top of this. Swirl a fork on top to create a marble effect. Add the rest of the cheese cake mix on top of this. Add the rest of the orange curd and swirl the fork on top again.
Keep this in fridge overnight so that the cake sets in. Dont keep it in freezer.

The next day, take the cake out an garnish with mint leaves, orange zest. The cake is ready.

    At what point do you blend in the lathered up cream?

  2. The lathered up cream, ie, the cheese cake mix, needs to be added as mentioned in the forth paragraph. in layers of cheese cake mix and Orange curd.
