Basmati rice 2 cups
Cumin seeds ½ tsp
Cloves 3
Cardamom 1
Cinnamon ¼ inch
Bay leaf ½
Coconut milk 4 cups
(or fresh milk )
Fresh cream ½ cup
Sugar 1 tsp
Salt to taste
Ghee 2 tb sp
Nuts, raisins, almonds ½ cup
Lime ½
Cumin seeds ½ tsp

Cardamom 1
Cinnamon ¼ inch
Bay leaf ½

(or fresh milk )

Method
- Soak rice for 5 minutes, wash, drain, and keep aside.
- Mix milk, cream, sugar and salt.
- Heat ghee in a heavy bottom pan. Fry nuts rasins and almonds and keep aside. Add cumin seeds, then cinnamon, cloves and cardamom and bay leaf. Add rice and fry for 5 minutes. Add milk and when it starts boiling, cover the pan and reduce the flame and cook till rice is done.
- Open the lid and add lime juice and stir carefully. Add fried dry fruits and serve hot with salad and pickle.
