Chicken rice recipe
Ingredients

  • Chicken : 750 gms
  • Salt to taste
  • Pepper : 1 tsp
  • Ghee : 4 tbsp
  • Ginger garlic paste : 1 tbsp
  • Chopped Onions : 3 no
  • Cinnamon : 1 stick
  • Cloves : 5 nos
  • Basmati rice : 2 cups
  • Garam masala : 1 tsp


Method
Cook chicken with salt and pepper. Once its cooked properly, shred the chicken and remove the bones. Save the chicken stock ( The water in which it was cooked).

In a large pan, heat 2 tbsp of ghee. Add one onion and sauté till it turns transparent. Add salt, ginger garlic paste, cloves and cinnamon into the pan. Once the masala aroma comes out, add rice and sauté for 2 minutes. Add 4 cups of chicken stock and cook rice in low heat till rice is cooked.

In another pan, add 2 tbsp ghee and sauté 2 onions. Once the onion turns transparent, add the chicken to it. Add a tsp of garam masala and fry for 5 minutes.

Preheat oven to 170 degrees centigrade. Grease a baking dish with butter. Add half of the rice into the dish. Spread the chicken into the bowl and then top it off with rest of the rice. Press the rice so that they are tightly packed. Cover it with a tin foil and bake for 30 mins at 170 degrees centigrade.

Garnish with tomato, mint leaves and serve hot.
