Banana stem fry ( Pindy  fry )

          Banana stem can be used in many ways. It is rich in fibres. The inner core of the stem is used for making different dishes.

Banana stem              12" piece
Green chillies            2
Shallots                     10
Chillipowder            1 tsp
Turmericpowder      ¼ tsp
Curry leaves             2 stalks
Oil                            3 tb sp
Mustard seeds          2 tsp          
Salt
Dry red chilli           1

Method
Cut the banana stem in to thin round pieces, and chop them finely. Soak in water, wash two or three times and  strain. Cook with little water and salt  till all water is absorbed (5 minutes will do ).

Heat a  non stick pan, add oil and when the oil is very hot, add mustard seeds. When it crackles, add dry chilli and then sliced shallots and green chilli. When it turns colour add chilli powder and turmeric powder followed by cooked banana stem and stir well. Continue frying on very low flame for 10 minutes stirring in between. Add curry leaves, stir well.

Serve with rice or chappaties or rotis.
