Sweet and Sour Ginger Curry



Ingredients

Grated ginger                                150 gms
Grated coconut                             1 cup
Chilli powder                                2 tsp
Coriander powder                         2 tsp
Turmeric powder                          ¼ t sp
Tamarind pulp                              3 tbsp
Sugar                                            3tb sp
Salt to taste
Oil to fry
Small onion                                  2
Green chilli                                  2
Mustard seeds                              1 tsp
Curry leaves

Method:

         Fry grated ginger to golden brown, transfer to a plate. Fry grated coconut in the same oil, when it is brown, add chilli powder, coriander powder, turmeric powder and mix well. When it is cool, grind all together to a very fine paste. Add tamarind pulp, sugar and salt and boil for 5 minutes.

        Crack  mustard in one tsp oil, fry onions, green chillies and curry leaves and pour everything over the ginger curry.

        This is a very tasty  side dish  and if stored in air tight bottle will remain good for weeks. It is best with plain rice.
