Sardines in spicy gravy

Ingredients

Big Sardines                                   10      
Red chilli powder                           2 tsp
Turmeric powder                            ½  tsp
Salt to taste
To crush
Small onions                                    1 cup
Ginger                                              1’ piece
Garlic                                               4
Green chillies                                   3
Curry leaves
Oil                                                   4  tsp
Water                                               1 cup

 Method

         Clean the fish, place it on a flat vessel and rub in lots of salt, wash  thoroughly with water. Crush onions,  ginger, garlic and  slit green chillies. Keep a pan (clay pot or manchatty  is best for cooking fish) on the stove, put oil and sauté onions, green chillies, ginger and garlic. When the onions turn transparent, add chilli powder and turmeric powder and add water and salt immediately. Allow it to boil for a few minutes. Add the fish and curry leaves, close the lid and cook for 5 minutes. Open the lid and twist the pan carefully and continue cooking for another 5 minutes. Remove from stove and let it stay closed for some time.

Serve hot  with plain rice or chappatties
