Chicken Soup


Chicken Soup Recipe
(serves 4, cooking time 1 hr)

Ingredients

  • Chicken thigh and leg joint : 4 pieces (about 600gms) 
  • (do not remove the bone)
  • Onion : 2 nos
  • Garlic : 2 pods
  • Chilli flakes : 1 tsp (optional)
  • Plain flour : 1 tbsp
  • Chicken cubes(Maggi chicken cube) : 2 nos
  • Carrots : 3 nos
  • Celery : 5 stalks
  • Potato : 2 medium size
  • Parsnips : 3 nos


Method
1. Chop all the vegetables into bite size pieces and keep aside.
2. Heat 3 tbsp vegetable oil and add chopped onions.
3. After 3 minutes add garlic.
4. After 2 minutes add chilli flakes followed by plain flour (flour adds thickness to the soup)
5. Add chicken and brown it on both sides (around 4 minutes each).
6. Add 4 cups of boiling water and the chicken cubes.
7. Add bit of salt and simmer for 35 minutes with the lid on.
8. Using a fork and knife take each chicken piece out and remove the meat from the bone.  Put it back into the simmering pan.
9. Add all the vegetables except celery.  Simmer for 10 minutes.
10. Add celery.  Simmer for 10 minutes.
11. Add pepper and salt to your taste.  Serve hot with bread.
