Beef Vindalu

Ingredients
Beef : 1 kg
Beef vindalu recipeRed chillies : 6 nos
Coriander powder : 3 tb sp
Cummin seeds : 1 tbsp
Pepper : 1 ½ tsp 
Fenugreek seeds : ½ tsp
Cardamom : 6
Mustard seeds : 1 tsp
Cloves : 6
Cinnamon sticks : 2’’ piece
Salt to taste
Sugar : 1 tsp
Vinegar : 5 tb sp
Small onions : 10
Ginger : 1 inch piece
Garlic : 8
Turmeric powder : ¼ t sp
Warm water : 6 cups
Oil for frying : ½ cup

Method
Cut beef in to thin big pieces, wash and drain remove all fat from the meat. Soak red chillies in hot water and grind well in vinegar. Grind coriander powder separately.

Grind cumin seeds, pepper, fenu greek, cardamom mustard seeds, cloves, cinnamon and turmeric powder together in vinegar.

Cut onions thin , chop ginger and garlic. Fry the onions in a non stick pan and keep aside. Fry chopped ginger and garlic, add ground chilli and fry for 2 minutes, add all the other ground masala and fry for a few minutes in low flame. Grind the fried onions and mix in to the masala.

Mix the masala with beef, add salt, sugar and vinegar and marinate for one hour. Fry marinated beef in the same frying pan until it turns brown in low flame.

Boil water and add to beef and cook until meat is tender. The gravy should be thick. It will take 2 hours to cook. The whole cooking should be in low flame.

Vindalu can be kept for many days. You can serve it with plain rice or rotis.
