Grilled Salmon with Couscous and Bell Peppers


Ingredients:
Grilled Salmon with Couscous and Bell Peppersrecipe
Salmon :2 big pieces
Couscous : 1 packet (lemon and coriander is best)
Bell pepper : 2 (1 red and 1 yellow, do not use green one)
Red onion : 1 large
Chicken cube 1
Olive oil : 2 table spoon
Salt to taste
Pepper to taste

Serves : 2
Preparation time : 45 mins

Method of preparation:


  1. Chop both the bell peppers and onion into small cubes.
  2. Add olive oil, salt and pepper and mix well.
  3. Spread it on a baking tray (spread aluminium foil first) and grill for 15 minutes.  Mix it every 5 minutes until  edges are dark brown.  Once it is ready, remove it from frill and keep it aside.
  4. Make the couscous according to packet instructions.  Add the chicken cube into the boiling water before you add to couscous.
  5. Cover it with cling film and let stand for 5 minutes.  Then add the grilled vegetables and mix well with fork.  Keep it aside in a warm place.
  6. On the same baking tray, use another aluminium foil and brush olive oil on it.
  7. Put the salmon on it and sprinkle it with salt and pepper.
  8. Grill for 5-7 minutes or till it starts to brown.  Turn it over and repeat the process.(make sure the fish is cooked)
  9. When salmon is ready serve it with couscous.
